Vegetable Pizza with Garlic Sauce

We are going to go on a cruise to Europe in October of this year. (2022) I was doing some research, my favorite thing to do, and after looking at a video of Albania the next video on You Tube came up. It was partly in German and it had English sub-titles. It looks fantastic and so we deciphered what the ingredients were and thought I’d share it with you.

Ingredients:

Leeks                                    (2) sliced

Carrots                                 (2) large grated

Spinach                                50 grams chopped

Red Bell Pepper                  (1) Diced

Potatoes                               4 or 5 peeled and grated

Eggs                                      4

Olive Oil                                4 Tablespoons

Milk                                        50 ml.

Flour                                      7 Tablespoons

Baking Powder                   5 Grams

Salt                                        2 teaspoons

Pepper                                  to taste

Cheese                                 European White Cheese (white cheddar?)

Black Sesame Seeds for Garnish

Directions:

Pour warm water over potatoes and let sit for 10 to 15 minutes.

In a bowl, beat the 4 eggs; add the olive oil, milk, baking powder, salt and pepper.

Whisk.

Drain and squeeze potatoes – put in the bowl with the veggies.

Pour batter over all and mix well.

Spread on a parchment lined baking sheet……about a ½ inch thick.

Bake 30 minutes @ 350 degrees.

Garlic Sauce

Yogurt                                   40 grams

Mayo                                     40 grams

Dill                                          1 teaspoon or so

Garlic                                     2 cloves minced

Mix well.

Grate cheese about 120 grams. Spread on Pizza. Sprinkle with Black Sesame seeds.

Back into the oven for 10 minutes @ 350 degrees.

Cut into squares and serve with Garlic Sauce.
