I am originally from Stockton, California. A town that used to have their nickname painted on a huge water tower “Stockton, Someplace Special” (We even have the sheet music) but I digress. One of the best restaurants in town for many years was called The Hatch Cover. It was located at the Marina that fed into the Delta. They had indoor and outdoor seating, a band on weekends and an awesome bar. They served very delicious food but one of my favorites, an apparently lots of other peoples too, was the Vegetable Casserole. I would say they served California Cuisine.
I was talking to my girlfriend the other day and I said “Hey Rob, do you remember the Hatch Cover?” and she said “Don’t tell me you found the recipe for Vegetable Casserole?” and I said “Yep, making it tonight” It was amazing and just how I remember it.

The only change I made to the recipe was ground sausage. So, its a Vegetable Casserole with meat. To me the Secret Weapon in this dish is the Sunflower Seeds.
