We have been grinding our own meat and making sausages for a couple of years now. Jon is really getting good at it. This year we made a number of different varieties.
One evening I was feeling creative in the kitchen and I came up with this dish. We’ve had it three times now. Here you go:

Ingredients:
5 to 6 cloves of garlic (minced)
1 small jar of marinated artichokes (chopped and reserving some of the marinade)
1/2 cup of sun dried tomatoes (chopped)
1 lb. of spicy Italian Sausage (not in casings)
1 jar of Alfredo Sauce
Your choice of Pasta: We used thin spaghetti
Optional: Fresh parsley (chopped)
Directions:
Saute Garlic and Sausage.
Boil pasta for 10 to 12 minutes. Drain.
Add Mixture to Pasta
Pour Alfredo Sauce and reserved marinade over pasta.
Optional: Garnish with fresh chopped Parsley
