Kelvin Grove Chicken

I made this dish when we lived in London in our first flat on Kelvin Grove, hence the name. I actually put this recipe on our blog that we had when we lived there. I came across it and thought it was worth repeating.

One night we were watching “the telly” and saw an ad for Philadelphia Cream Cheese and this was the dish. I added my own flair to it and Viola here it is.

Kelvin Grove Chicken

6 Chicken Thighs – deboned, skinned, and cut up.

1 Red Bell Pepper – diced

1 small yellow onion – diced

4 large mushrooms – sliced

Cooked Rice

Garlic Sauce ( mayonaise and minced garlic)

1 heaping tablespoon Cream Cheese

1 heaping tablespoon Butter

Directions:

Prepare Rice, simmer til done. Meanwhile, slice and dice, then saute Chicken in Butter. Add remaining ingredients. Saute until done. Add Garlic Sauce and Cream Cheese. Spices used: Black pepper, salt, red crushed chili peppers, garlic powder and mixed herbs.

Put the Rice in a bowl, top with Chicken and the remaining ingredients.
