Cooking Class in Portugal

When we travel with our friends we like to experience the local flavor. The flavor of not only the food but the culture too. It is almost a prerequisite now that when travel, we cook.

Last June there were 4 couples who traveled to Portugal. We rented a villa in the Algarve which is the southern most area of the country. One or two of each of the couples were celebrating a 50th or 55th birthday. (me, not so much !! I just celebrated)

The company we decided to hire was called Gosto Lagos and our extraordinary chef was Lena. She was a spitfire of a woman and a marvelous chef. I am going to include a recipe from that day for Calderirada de Peixe pictured below. This translates to Portuguese Fish stew. The website will also have other recipes and you may recognize them from the photos of our dishes.

We also made a tomato salad with edible flowers, grilled eggplant with walnuts and a couple of dishes using Portugal’s Salt Cod and Sardines.

The dessert that was made required a meringue to be whipped up. Here is Lena demonstrating that her meringue will not drip!!!

There is a hilarious story that happened this particular night that I will save for another post. It will be referred to as “Mattie” (Just a little tease for another time.)
