Aebleskiver is a Danish dessert made in a very specific pan.
When we lived in Los Angeles I was a member of the Woodland Hills Womans Club. There was a sweet elderly lady named Dottie Heitz who was the darling of the San Fernando Valley. She was very philanthropic and just a joy to be around. She became ill in her early 90’s and knew that she only had a short time left on this earth. So she embraced her life and friends and gave herself a going away party. She sat on a red throne in her back yard and over a hundred people lined up to say goodbye to her. I first met her at a club Christmas party and the first thing she said to me was “Do you have a nickname Phyliss”? I said “Why yes I do. My name is Debbie.” We had a good laugh. She became very sweet on my husband Jon and at her going away party she told him “Jon, If I were 60 years younger I’d be giving Debbie a run for her money.” Again, much laughter. Dottie knew I loved to cook and when she passed I was given an Aebleskiver pan of hers. I knew it was something special but didn’t know the name of it then.
Fast forward about 5 years and the pan had earned a place on top of my stove. I cleaned it regularly but had never used it. We had a party one evening and our friend Dean saw it and said “I see you have an Aebleskiver pan.” I said “I do”? So I told him the story about how I acquired it and then looked up the spelling and pronunciation. The rest is history. Here are a few pics of the day we made abelskivers and a link to the recipe.
