Plum and Parmesan Salad

We recently bought a house. It was built in 1985, so it is in an established area. The back yard is huge and has 5 fruit trees. We planted a lemon tree and we didn’t really know what the other ones were until spring and early summer. We had friends guess. Some said walnuts…..turned out to be apricots. The other fruit trees were apple, tangerine and plum. We thought it would be fun to make plum jelly and we did. It took 5 pounds of plums and make about 8 jars. We looked up other recipes for plums and came across this one for Plum and Parmesan Salad. We thought, huh, that seems weird but it was delicious. Enjoy !

Ingredients

2 Tbsp. Sherry Vinegar or Red Wine vinegar

1 Tbsp. Honey

1/2 tsp. cracked black pepper, plus more

6 ripe red, black, and/or green plums sliced into wedges

1/4 cup shaved Parmesan or Pecorino, plus more for serving

2 Tbsp extra-virgin olive oil

Flaky Sea Salt

Recipe Preparation

Stir vinegar, honey and 1/2 tsp. pepper in a medium bowl until honey is dissolved. Add plums to dressing and toss until coated. Add 1/4 cup Parmesan and gently toss again just to evenly distribute throughout salad. Transfer plum salad to a shallow bowl. Top with more Parmesan, drizzle with oil, and season with salt and more pepper.
