Homemade Pasta with Mussels

When we took our cooking class in Italy, we learned how to make Mussels with Pasta. Homemade Pasta. We enjoyed making it ourselves so we bought a “Chitarra”. It is the device used to make pasta and it has strings like a Guitar…..hence the name. Anyway, we decided to try to recreate it once we were back in America. This is the evening and the final result…..enjoy!

Nobody plays the Chitarra like Dean

We really don’t have a recipe for the dish other than to scrub the Mussels and rip off the beard. Did you know Mussels had beards? We didn’t either.

Scrubbing and De-Bearding the Mussels

The Dough: 100 grams of flour plus one egg per person, mixed together by hand, let it rest for 30 minutes and then roll it out.

The mussels are heated on the stove with nothing but mussels in the pan. There is liquid in the mussels already and when they steam the shells open up. Using butter and/or olive oil saute the mussels with garlic.

We placed the rolled out pasta dough on the Chitarra. We then rolled the dough on the device and the noodles fell through. We boiled them in the mussel liquid.

To finish, we poured the sauteed mussels over the noodles and Voila!
