Sausage Stuffed Acorn Squash

I sadly didn’t take a finished picture of this dish but we loved it so much that I at least wanted to share the recipe with you. It is the end of August and Autumn foods are just around the corner. Acorn Squash are so pretty and have a satisfying comforting taste. When you stuff it with Sausage it amps up the flavor immensely. It is stuffed with ground sausage and we used Hot Italian Sausage. It calls for mushrooms, celery, onions, 1 egg, sour cream and Parmesan Cheese. We were out of Parmesan so I used shredded Mozzarella. I don’t think it matters, any cheese’ll do.

So the next day I heated up a half of the Acorn Squash for lunch and Jon said “Oh, I see you are having the “5 Tums” special today”. Yes, it was a little spicy but if spicy gives you heartburn then get the “Mild” Sausage. To me, it was perfect.
