Fiery (or not so Fiery) Cherry Pepper Appetizers

Once a week we get a box of Imperfect Produce delivered to us. Now it is called Imperfect Foods but it is either Produce that is misshapen and the grocery stores reject it or the food container is going to expire sooner than the store feels comfortable selling. Anyway, in last weeks box we got one dozen Cherry Peppers. Not knowing exactly what they were, Jon looked up a recipe for them. We were also going to our friends house to sample the Beer they had made a few weeks ago and thought that these would go well with Beer. (What doesn’t?)

The recipe calls for Sour Cream, we used Mascarpone only because we forgot to buy sour cream at the store. (you know how that goes) It also says to cut the tops of the Cherry Peppers and remove the seeds, so that it doesn’t get too spicy. Well, if you like it a little spicy don’t take out all the seeds. Ours wasn’t Fiery at all. We also added 1/2 teaspoon of pepper. If you happen to have left over stuffing put it into a bell pepper and toss it into the oven. All in All, it was very good and went well with the Beer. (that’s the main thing, right?)
