New Mexico 2020

So other than the Caribbean cruise we went on for our anniversary in March, we had not gone anywhere in 2020. We adhered to the stay at home order for the most part. Doctors appointments, the grocery store and one or two friends houses who were as cautious about the virus as we were. We had been planning a trip to New Mexico for over a year and decided to go ahead and take the trip. We have friends who have a vacation home there about an hour north of Santa Fe in the mountains. It is remote, but it is beautiful. We always cook fabulous meals and drink very nice wines while we are there. We go for hikes all around the area. They even have a wine cellar build into the rocks. I took plenty of pictures showing off the autumn colors and am including some of the recipes of the meals we made. Sit back and enjoy New Mexico from a socially acceptable distance.

We went into Los Alamos for groceries and it is a beautiful drive there. Here are some photos of that area.

So, fully equipped with groceries, back to the house we go ready to eat and drink New Mexico style.

Dinner that night was Green Chili Frito Pie, Salad with a Cilantro Vinaigrette, and a Taco Cocktail (see previous post)

The next day we took a drive to Santa Fe and had lunch. We also came across this very cool Spice store. Here is their website so you can check them out online. They do ship.

After all that shopping and driving we needed some snacks and Rosé when we got home. We have a joke that whenever the sun is out it is time for Rosé. I’ll tell you that story in another post.

The next day we had Chinese BBQ Pork with Hot Mustard and Sesame Seeds and a Spicy Cucumber Salad for Lunch. (I told you we eat really well on these trips!) For Dinner that night we had Jon’s Famous Ton Ton Noodles.

We took a drive over to the Chama River and were able to pull over to a vista spot for some pictures.

Jon is the baker in our house and Dee Dee also likes to bake, so they decided to take a day making something they hadn’t made before which was an Apple Strudel.

The Two Fat Ladies had a baking show in England when we lived there. There may be some references that aren’t as familiar to Americans like Caster Sugar, which is just granulated sugar. Anyway, here are some photos of that process. It turned out really tasty too.

On our last night there Dee Dee and Jason made a very good Giada De Laurentis Pasta Dish. Wow, it had all the umami you could want in it.

And what is a trip without a photo bomb. This photo was intended to be for our friends the Blounts whose wine we were drinking while playing games. That is the other thing we do…..games, games, and more games.
