Green Chili Frito Pie
When I made this dish we were in New Mexico. I originally was looking for Hatch Chilies but instead used Anaheim Chilies because that is all the store had. However, they were great. We changed up this recipe a little…….ok, ….well a lot. We used Chicken Thighs (cooked and diced) and made it into a layered casserole. Spray the bottom of a casserole dish lightly with Olive Oil and begin layering…..Frito Layer, Chile Layer and then Cheese Layer. (Repeat) Bake for 20 minutes at 375. Garnish with sour cream and cilantro.

I also made a green salad, nothing fancy, but made a very good Cilantro Lime Vinaigrette.

We loved the Frito Pie casserole! And save some for breakfast and add a fried egg… seriously yummy!
