We went to Cabo San Lucas for my husband’s 50th birthday and took a cooking class there, more on that later, but that is where we learned to use a Comal. A Comal is a smooth flat griddle typically used in Mexico, Central and South America to grill and prepare meals.
We grow tomatoes and peppers in our back yard.
I used to have a cast iron stomach and could eat anything spicy and have it not bother me, but as I’ve gotten older I get heartburn and Montezuma’s revenge. TMI? Too Bad! I still love to eat hot and spicy and I just deal with the effects of it later. Here is my recipe for Spicy Salsa.
Ingredients:
Fresh Ripe Tomatoes (you can grill them on the comal for a smokier taste)
Onions (Also on the comal if you wish)
Lots of Garlic
Olive Oil
Serrano Peppers (take most of the seeds out unless you like it super spicy)
Cilantro
Salt and Pepper
Put all the ingredients in a food processor and pulse until you get the consistency that you like.
Serve with Tortilla Chips and your favorite Cerveza. Enjoy.
