Peruano Beans

When we lived in Los Angeles there was a grocery store in Canoga Park that catered to Mexican dishes. They had the best produce and an in store restaurant. It’s name……. Vallarta’s.

We would go there for lunch and then shop. The prices there were very reasonable too. One day we came upon some dried beans that looked interesting and I decided to make up a meal with them. I did and Oh My, it was so good. Here is my recipe for Peruano Beans.

Ingredients

1 bag of dry Peruano Beans

1/2 head of garlic – diced

2 jalapenos – take out as many seeds per how spicy you like it and slice them.

6 or 7 slices of bacon – cut up

1 can of chicken broth

Cilantro

Onion- I use Mexican green onions (2 or 3) chopped

Soak the beans in salted water overnight. Cook on the stove in boiling water for 10 minutes. Transfer to a crock pot. Add the above ingredients. Cook on high for an hour so, then turn to low for the rest of the day.

Good with Corn Muffins. This is a cheap and tasty meal.
