Uncle Jon’s Hot Dog Mess

This dish goes under the category of old time Comfort Food. It was a creation of my Uncle John, hence the name. He was a man who picked mustard greens in the fields, ate raw parsnips with salt and a jar of peanuts while watching sports on TV. One thing he loved was his comfort food. So my Mom taught me how to make this dish. My son Joey, loves it, my daughter Nikki, not so much. It’s ok.

Ingredients:

1 Package Hot Dogs

6 Red Potatoes (cut into fourths)

6 Strips of Bacon (raw and cut into 1 inch chunks)

1 Large Yellow onion diced

Fresh Green Beans

5 whole Garlic Cloves

Salt and Pepper to taste

1 red onion (raw, diced for garnish)

Butter for Potatoes

Reserved Sauce

Directions:

In a large pot, bring green beans, bacon, yellow onion and garlic to a boil. Simmer for 2 to 3 hours; adding more water occasionally. One hour prior to serving, add hot dogs and potatoes. To assemble, first place the potatoes on the dish, cut up, with butter. Add green beans and hot dogs. Reserve a little of the sauce from the pan and pour over the mixture. Top with fresh diced red onions. It looks a MESS, but tastes wonderful.
